Think places like this no longer exist in Paris? You’d be mistaken. Head to Caboulot at the foot of Montmartre—you won’t be disappointed.

Caboulot—the word designated a disreputable cabaret in the dialect of eastern France—opened in December 2024. In the first room, a large bar awaits, perfect for leaning on and sipping French wines at friendly prices during aperitif hour, before finding a spot on a banquette for your meal. Given the place’s popularity, it’s not uncommon to find yourself shoulder-to-shoulder with fellow diners, which is a great opportunity to chat and laugh with your neighbors.

And then, of course, there’s the food. For starters, you can choose the classic (organic) egg with homemade mayonnaise (€5), but the pea velouté with herbed ewe’s curd (€7) is a miracle of freshness, rivaling the delicious pork terrine.

If you just want a snack, go for the Croque-Monsieur—white ham and Comté, one of France’s best cheeses (€14). The hanger steak with Bordeaux sauce (€22) is perfectly rare and can be served with a little pot of crisp vegetables if you wish. The two young chefs also work wonders with fish, such as pollock or sea bream with lemony beurre blanc and shaved fennel.

For dessert, the house favorite is the caramel French toast (€7)—slices of bread soaked in eggs and sugar, then pan-fried. But the lemon basil cream (just tart enough, with crunchy peanuts) is fantastic in summer.

To finish, why not try the Trou Normand (€6)—apple sorbet & Calvados—a very old cocktail once enjoyed at wedding feasts in Normandy to revive the appetite. It’ll give you the strength to climb the Butte Montmartre.
